Poké (Po-Keh)  /poʊˈkeɪ/ verb– Hawaiian to ‘slice’ or ‘dice

A classic Hawaiian dish of cubed, marinated fish. Traditionally the local fisherman would haul in their catch, dice it up, season it and eat on the spot. The ‘Poké Bowl’ is a modern approach to this concept and normally includes a base of rice or slaw topped with seaweeds, fruit salsas, pickles and garnishes.

The Island Poké Story

Growing up in California with frequent trips to Hawaii, James’s inspiration for Island Poké stems from his childhood summers spent in the islands. James founded Island Poké in 2015, where he traded on London’s buzzing street food circuit. Born from a frustration with the monopoly of London’s office lunch trade, Island Poké brings us a more fun, vibrant, interactive, healthy and flavoursome offering.

In November 2016 James and the team opened Island Poké’s first ‘bricks and mortar’ site on Kingly Street in Soho, followed by a second in Broadgate Circle just ten months later.

We want our customers to feel like part of our ‘Ohana’ (family). We hope you see our passion for incredible food and feel at home with our friendly vibes and laid-back love of life. We have always aimed to stay true to our roots and influences, avoiding the kitsch version of Hawai’i which we so often see portrayed.

JAMES GOULD-PORTER

FOUNDER

Busted at his previous job for spending too much time researching Poké concepts, James finally bit the bullet and launched Island Poké, much to the dismay of his parents! Having never looked back since, he is now the eyes and ears of all things Poké. He is swiftly becoming London’s very own Poké Godfather.

HUGH PETIT

OPERATIONS

Hugh joined the team before opening our Kingly Street site to help with the daily operations of Island Poké. Originally a trained chef, Hugh cut his teeth as a manager with Soho House before joining our ranks. Quick witted and never short of a pun, Hugh is Island Poké’s very own class clown. He’s our man on the ground, and the go to guy for all operational aspects of the company.

LAUREN SMAIL

HR MANAGER

Lauren is the personification of all things we hold dear at Island Poké, a true brand ambassador. Having been part of the team which opened our first site, she is the perfect character to lead us in managing all aspects of recruitment, particularly looking after our growing team and their needs. Lauren lives and breathes Island Poké’s brand ethos and truly embodies the Spirit of Aloha.

JOHN-MICHAEL SOOKIAS

HEAD OF BRAND & MARKETING

JM joined our team to lead our brand growth and marketing strategy. Originally with a  background in Business and Marketing, he’s worked in various sectors ranging from tech and sports to food and drink. He’s obsessed with food, when he’s not planning the next guest bowl collaboration or working on our app, he’ll be pondering what to have for lunch.

QUALITY ASSURANCE MANAGER

Born and raised in Hawai’i, Lauren brings Island Poké a true sense of Aloha and keeps us faithful to our Hawaiian roots. Her genuine love of food, people and poké made her the natural choice to make sure our food and staff are on point at all of her site. She hops between all of our sites to ensure every customer has an authentic taste of the Hawaiian islands.

Meet Bec, our events guru. A slick operator and organised to the max, Bec still manages to be the most laid back member of the Island Poké team. Being born on the sunshine coast has probably got a lot to do with it!

Margaux joined us after successfully launching her own street food venture, Milo & Hector’s. Similar to our street food roots she knows first hand where we have come from and what it takes to keep growing. With her French-American heritage she brings us a different angle to the Island Poké family, Shoreditch and beyond.

PANAGIOTIS ALEIFERIS

CANARY WHARF MANAGER

Meet Panos, our General Manger at Canary Wharf. A formidable Spartan (despite what his profile photo suggests), he joins us with a wealth of experience in the hospitality trade. Always the first to get a job done, his efficiency is effective, and his jokes also quite funny- he’s been another great addition to our growing team!

When it comes to ingredients our ethos and direction is governed by two factors.

QUALITY

This is what sets Island Poké apart from the rest- using only prime, sashimi grade fish, the most perfectly ripe fruit & veg and premium Japanese sushi rice. We do not spray with carbon dioxide to keep our tuna ‘looking’ fresh for longer, it is delivered to our stores each morning and will start oxidising almost immediately. Our Ahi is also mercury tested and super frozen to -60°c at source, locking in the freshness and ensuring the fish is safe for raw consumption.

SOURCING

Our tuna is exclusively line-caught, with the fishermen operating under strict regulations to ensure their vessels are both dolphin and ocean friendly. All boats are chipped and monitored to avoid overfished or illegal waters. Our salmon is farmed in the strong, icy currents off the Orkney and Shetland Islands in Scotland ensuring lean, protein-rich fish.
